Lime-ginger cole slaw is a healthy meal addition

Makes 4 Servings

2 cups shredded green cabbage

1 cup shredded cabbage

1 1/2 cups matchstick-size carrots

1/4 cup finely chopped green onions

3 tablespoons lime juice

2 tablespoons sugar

2 tablespoons vegetable or canola oil

1 1/2 teaspoon grated fresh ginger

1/8 teaspoon salt

1/8 teaspoon red pepper flakes (optional)

Combine cabbage, carrots, green onions, lime juice, sugar, cilantro, oil, ginger, salt and red pepper flakes, if desired, in large bowl. Toss well. Let stand 10 minutes before serving.
