When it comes to specialty cocktails, Plantation Gardens Restaurant does not fool around. It takes its drinks seriously, and bartender Justin Thompson can whip you up cocktails that are refreshing, savory and magnificent.
Eight years ago, Thompson decided to pack his bags, depart Mexico and live the island life here on Kaua’i. He has been with Plantation Gardens Restaurant for four years and really enjoys “the people and the good atmosphere of Kaua‘i and Plantation Gardens.”
Sun Burst Margarita
Like all of Plantation Gardens specialty cocktails, the Sun Burst Margarita is priced at $9.25. It was created in-house and is unique from the other specialty cocktails — it is more of a savory cocktail as opposed to sweet. Thompson gave a detailed description of the drink and how it’s constructed: “The Sun Burst Margarita consists of Sauza tequila, it has muddled cilantro, lemongrass and Hawaiian chili pepper. It also has a little bit of agave nectar, fresh squeezed grapefruit juice, lime and pomegranate. It leaves a nice taste in the back of the throat — a little bit of spice back there. It’s a very good drink.”
I am sucker for savory cocktails. What I like about this particular cocktail is that it doesn’t leave your mouth scorching hot. It leaves the right amount of spice and acidity that leaves a indistinguishable sensation on your palate that isn’t too sweet, too hot, but just right.
This cocktail is perfect with any of the pupu appetizers on the menu. Personally, I would recommend enjoying this cocktail with the Ahi Tuna Poke, Crab Rangoons, Lobster Spring Rolls or the Plantation Style Sampler.
