PUHI — Almost everyone has been able to sample their work, and as a demonstration of their achievements, six medals graced the necks of five students.
Chef Martina Hilldorfer, one of the instructors at the Kaua‘i Community College culinary arts department, joined Jason Sunada as they got photographs of the five students who earned medals at the 2008 Hawai‘i State Student Culinary Expo last week on O‘ahu.
“We had one gold, one silver and three bronze medals,” Hilldorfer said, sharing the pride of the culinary arts students’ accomplishments at the state competition.
Kalani Amdur is no stranger to the expo, and headlined the KCC students with a gold medal.
“The last time, I got a bronze for my lamb rack,” said Amdur, who has been very visible at public events featuring KCC culinary arts students. “This year, I finished with a gold medal for Hot Foods.”
For the competition, Amdur prepared Salmon done in style of En Papiotte with salmon mousse inside on a bed of wild rice pilaf with yellow and green zucchini and carrot ribbons and a herb cream reduction sauce.
John Ruiz was a silver medal winner for his Hot Food entry of Panko Herb Cruted Lamb Racks with potato and leek au gratin.
The KCC culinary arts students finished the expo winning four bronze medals with Grecean Manuel heading those winners with two awards for her Fondant Purse Cake and an Eagle Tallow Sculpture.
Kristen Yanagawa earned bronze with her Appetizer Cold Food Salon and Braden Hiraoka got his bronze medal for the Dessert Salon.
Chris Sadaoka rounded out the KCC student contingent with his Hot Food entry of Konbu Green Tea Steamed Onaga.
The student expo was held Saturday at the Kapiolani Community College and featured three American Culinary Foundation judges who evaluated the contestants on Friday.
Stafford Decambra, Rene Marquis and Wolfgang Bierer were the judges.
