PUHI — Chef Martina Hilldorfer, an instructor with the Kaua‘i Community College culinary arts department, said the response to the Grand Buffet has been tremendous.
“We’re going to max out at 150 people, and I know we have at least 120 reservations already,” Hilldorfer said as her Garde Manger class got underway in the shadow of customers browsing through the bake shop offerings.
Hilldorfer explained that the Garde Manger students learn how to prepare cold food.
“This is their final class before they go out to open their own restaurant,” Hilldorfer said. “Essentially, Garde Manger is the art of preserving food.”
For the class of a dozen students, Hilldorfer said the aspiring chefs have learned about the pantry, prepared cheese, a variety of sausages, bacon, sauerkraut, and even made root beer.
With several weeks to go before the Grand Buffet, a showcase of student work, Hilldorfer said the students will be learning ice and vegetable carving before the event opens its doors on March 4.
“All of the different students come together to prepare for this event,” Hilldorfer said. “The bake shop students will have items in this as well as the other culinary arts students.”
The event runs from 4:30 to 6:30 p.m. at the KCC Dining Facility; however, due to the limited amount of tickets available, reservations are required at $20 per person.
