The first Sunday of every month the Vegetarian Society of Hawai‘i hosts a potluck and lecture at the Kapa‘a Neighborhood Center where they also invite some friendly competition among home cooks. The September recipe winner was Eliel Starbright of Kapa‘a with his Banana Ice Cream made in a Champion juicer and the August winner was Marta Whitlock of Moloa‘a with a Raw Papaya Stew.
Banana Ice Cream
Servings: 15
Ingredients
20 frozen bananas
1 cup walnuts
1 cup macadamia nuts
Puree bananas and nuts alternately in a Champion juicer. Serve sprinkled with macadamia nuts.
Raw Papaya Stew
Servings: 10 to 15
Ingredients
8 to 10 cups diced ripe papayas
5 medium-sized raw corn, minced
1 large red onion, minced
4 cloves garlic, minced
2 inches minced ginger
1/2 cup unripe mango
1/2 cup raw sunflower seeds
2 tablespoons cilantro, minced
Juice of one large lemon
2 to 3 tablespoons Nama Shoyu
1 tablespoons cumin powder
1 teaspoon cayenne pepper
Combine all ingredients, chill and serve.
