Some of the most flavorful food on Kaua‘i comes out of Mermaids Cafe, that tiny little restaurant wedged — literally — in between two buildings in Old Kapa‘a Town. But try the exotic drinks there and you will be forever hooked.
The hibiscus lemonade is prepared with hand-squeezed local lemons mixed with sugar water and hibiscus tea. Can you imagine coming from a day at the beach and having one of those? I can.
The sweet April Minder can make a really sweet lemonade. But her real talent is taming the beast. She has a 8-year-old quarter horse named Bo. Those horses can easily weigh over 1,000 pounds, but the California-born cowgirl is not one to be intimidated by size.
Bo, a buckskin with three black legs and — yes, he has four legs — a brown leg, is actually just as sweet as April.
The old saying tells us to never look at a gift horse in the mouth, but this would actually be the first thing April would do if anyone gave her a horse: She’s going to school to be a dental hygienist.
April has lived all over the place, but it seems she has grown roots on Kaua‘i. She has a 3-year-old boy, the only man currently in her life. That’s right, she’s single.
Mermaids Cafe is right in the heart of Old Kapa‘a Town, between Java Kai and The Eastside. It’s open everyday from 11 a.m. to 9 p.m.

Squeeze the lemons with a firm grip, and mix the juice withhomemade sugar water, sweetened to taste. Pour into a glass filledwith ice cubes, but only until it fills half the glass. Fill up theother half with the hibiscus tea. Sweet, you’ve got an amazing andhealthy drink. And if you used local lemons, you just put food inthe mouth of a local farmer. Sweet!
