In the heart of sunny Po‘ipu, Keoki’s Paradise offers a chillaxed, island atmosphere. Full of good food and drinks, island music and excellent service, Keoki’s Paradise is da place to take a load off and relax.
Manette Decosta, bar and marketing manager, emphasized Keoki’s specially handcrafted cocktails: “Chris Nii, a representative of Southern Wine and Spirits, and his team of mixologists from O‘ahu put together these tropical drinks for us.”
Decosta said that Keoki’s is trying to capture the theme of “island traditions,” which consists of the aloha spirit and handcrafted cocktails full of familiar island flavor.
“We want to form long lasting relationships with our customers, by providing for them a familiar atmosphere mixed with delicious foods and drinks,” Decosta said.
Blue Thyme:
The Blue Thyme is a quirky hand crafted cocktail, which is a tad sour, sweet and carbonated. Contrary to its name, this pink drink is a delicious blend of Kimo’s Merlot, Maui margarita sour mix, Sprite and Smirnoff Blueberry Vodka, which is shaken profusely, then garnished with a thyme sprig in a lemon wedge.
Ingredients:
1.5 ounces Maui margarita sour mix
4 to 5 thyme sprigs
1.5 ounces Kimo’s Merlot
1.5 ounces Smirnoff Blueberry Vodka
Soda/Sprite press
Other handcrafted specialty cocktails Keoki’s offers are: The Skinny Ginger Chi Chi, a pineapple drink infused with coconut vodka and ginger liqueur, the Po‘ipu Pina, a pina colada with a “da kine” twist, and the Plantation Porch Tea, an iced tea concoction full of Jameson Irish whiskey, mint leaves, a couple dashes of angostura bitters and a taste that will leave you coming back for one or two or three more. All handcrafted cocktails range from $8.50 to $13. The Blue Thyme is appropriately set at $9.
