PRINCEVILLE — Jean-Georges Vongerichten’s Kaua‘i Grill at The St. Regis Princeville Resort has appointed Ashlee Fairbanks as general manager and Garrison Price as chef de cuisine. Kaua‘i Grill features the cuisine of international chef Jean-Georges Vongerichten, a news release states.
PRINCEVILLE — Jean-Georges Vongerichten’s Kaua‘i Grill at The St. Regis Princeville Resort has appointed Ashlee Fairbanks as general manager and Garrison Price as chef de cuisine.
Kaua‘i Grill features the cuisine of international chef Jean-Georges Vongerichten, a news release states. The menu utilizes the fresh fish and ingredients indigenous to the islands, while adapting recipes and culinary techniques to showcase Vongerichten’s unique approach.
Fairbanks’ and Price’s vast experience and knowledge make them ideal candidates for their new leadership roles at Kaua‘i Grill, according to the release.
“Our mission at Kaua‘i Grill is to offer intensely flavorful, fresh and simply prepared dishes fusing Asian flavors with classical French technique,” Price said in the release.
“Hawai‘i’s amazing weather and rich volcanic soil produces some of the best fruits and vegetables in the world,” he said. “Our menu is inspired by these island-grown products and the Hawaiian farmers and fishermen we work with on a daily basis.”
Price joins St. Regis from the Four Seasons Lana‘i Resort, the release states. Prior to that, he held the banquet chef position at The Nines Hotel, A Luxury Collection Hotel, in Portland, Ore., among other various capacities since opening the property in 2008.
Between 2004 and 2008, he held numerous positions in the culinary industry, including banquet chef at The Peninsula Chicago and their numerous restaurants: Shanghai Terrace, Avenues and Lobby, the release states. His earlier years were spent at Café Patou, a fine French and Italian restaurant in Rockford, Ill., and at the AAA Five Diamond C Lazy U Ranch in Granby, Colo.
Price is a native of Chicago, and studied at Eastern Washington University and Rock Valley Community College.
Fairbanks has worked in the restaurant business in a multitude of capacities prior joining the St. Regis Princeville team, the release states. Last year, she worked as an independent restaurant consultant in Newport Beach, Calif., and Las Vegas.
Before consulting, Fairbanks held managing and directing positions at a number of restaurants, including Stonehill Tavern at The St. Regis Monarch Beach Resort and Spa in Dana Point, Calif., and Wolfgang Puck Fine Dining Group at the Mandalay Bay and MGM Grand in Las Vegas, the release states.
She studied business management at the University of Nevada Las Vegas after receiving an associate of arts degree in business from the Community College of Southern Nevada.
