Vegetarian Society of Hawai‘i hosts a vegan potluck and lecture at 12:30 p.m. the first Sunday of each month at Kapa‘a Neighborhood Center. A prize is given to the maker of the best recipe voted by a guest judge. October winners were Linda and Abi Brooks for their Pasta Salad.
Linda and Abi’s Pasta Salad
2 12 ounce boxes of Spinach Fettuccini noodles
1 16 ounce box of Penne Rigate noodles or noodle of choice
To noodles, add:
2 6 ounce cans of black olives finely chopped
2 red medium onions, diced
6 medium roma tomatoes
1/3 cup sesame seeds
1/3 cup poppy seeds
1 bulb minced garlic (not a clove, the full bulb)
2/3 cup nutritional yeast flakes
1/8 cup basil seasoning
1/8 cup oregano seasoning
1/8 cup Italian seasoning
2/3 cup lemon juice
1/2 cup olive oil
2 to 3 tablespoons sea salt or real salt
Cook pastas in boiling water until done then rinse in cold water and drain. Add all the above ingredients and serve.
