Who needs fireworks when you have thunder and lightning?
Despite the rain, thunder and lightning that passed through the island late Tuesday afternoon, an overflowing crowd greeted the owners of Brick Oven Pizza to celebrate the grand opening of its Wailua location.
“We’ll be open starting Tuesday for lunch,” said Meagan Rice, who along with her husband Arthur and two other couples, owns the well-known pizzeria.
Corey Aguano and his wife Nalani, another of the owning couples, said there was a lot of work to be done at the former Wailua Family Restaurant location.
“Basically, we had to rebuild the whole inside,” Aguano said. “It was a lot of work, but it was worth it.”
At the core of Brick Oven Pizza is their Kaua‘i’s Own Original ‘Super’ Pizza, hearth baked with a homemade touch. The pizza, with 20 toppings to select from, is available in small (10 inches), medium (12 inches), or large (15 inches).
Joining the basic pizza offering are specialty pizzas including Imported anchovy, smoked ham and tomato, smoked ham and pineapple, bay shrimp and fresh garlic, Hawaiian BBQ pizza, vegetarian, UltiMEAT and the Brick Oven ‘Super’.
Joining that lineup are appetizers, soups and a variety of salads.
Dessert offerings, including aloha ice cream pie, double chocolate cake and lilikoi cheese cake, round out the menu.
For the sandwich aficionados, hot choices include chicken, vegetarian, and the “Super”. Other hot sandwiches include Portuguese sausage, Italian sausage, roast beef and seafood.
The Wailua location will be open from 11 a.m. until 10 p.m. Tuesdays through Sundays. On Mondays, the restaurant is open only for dinner from 4 p.m. to 10 p.m.
